Chicken Bites and Dipping Sauces

Kids love chicken nuggets because they are fun and easy to eat. Mums love them because they are an easy meal that the kids like to eat. But…have you ever seen how they are made?? Jamie Oliver demonstrated it in his show Food Revolution… YUCK! Here is a recipe that you can make at home and feel good about your kids eating. A child could handle these from around 12 months old. Expand your child’s taste buds with some fun dipping sauces, homemade means no added chemicals and a lot less sugar.

Chicken Bites

(Adapted from Tosca Reno’s Clean Eating for Families & Kids)

3 chicken breasts cut into strips or bite size pieces

Coating:

¼ c oat bran

¼ c wheat germ

1TBSP ground flax seeds

¼ c ground almonds

½ tsp sea salt

½ tsp pepper

1 large egg, lightly beaten with ½ c water

Preparation:

1. Preheat oven 200C. Prepare baking sheet with parchment paper or lightly grease it with olive oil.

2. Cut chicken breast in strips or bites, and set aside.

3. Combine all of the dry coating ingredients in a container with a tight lid.

4. Dip the chicken pieces in the water/egg mixture and then place in the dry coating mixture. Coat each place well and place on the baking sheet.

5. Bake in the oven for approximately 10 minutes (You want them golden but not dry)


Dipping Sauces: Just mix and they are ready to enjoy.

Honey-Mustard:

2 TBSP Dijon mustard

1 TBSP Honey

Curry Mayo:

2TBSP Mayonaisse

Dash of Curry powder

Homemade Ketchup: (a lot less sugar and preservative free!)

1 large jar of tomato paste

¼ c water

2TBSP brown sugar

¼ tsp cumin

¼ tsp dry mustard

¼ tsp cinnamon

1/8 tsp ground cloves

2 TBSP cider vinegar
